We specifically extract at a molecular level, using a super-critical fluid to extract the exact molecules we require. These molecules form part of the plants own immune system. They are produced through the secondary plant metabolite (SPM) pathway. They can be specifically elicited by a single fungal protease, or a viral or bacterial attack to the plant. This triggers an immune response, dramatically increasing the level of SPM. When agrochemicals are used, there is no elicitation. (It is important to note that ‘organic’ does not necessarily mean the absence of a fungicide, as there are certain fungicides licensed for organic use.)
In addition, due to selected breeding programs, GM development, and the use of chemical or mechanical pest control, and monoculture production techniques, these levels of secondary plant metabolites are significantly reduced (often not produced) in modern varieties of ruit and vegetables.
The taste characteristics of SPM are often seen as undesirable because they taint the taste (including bitterness) and many processes have been developed to specifically remove them from our food, such as ion exchange resins or membrane separation technologies, or simply bred out. This has all led to a dramatic reduction of secondary plant metabolites in the food (organic or otherwise) that we consume.
